For this reason, Prima Donna cheese does not age for a set amount of time, but rather until it acquires a particular flavor profile. Throughout the aging period, there are different varieties we have identified as the pinnacle flavor stages: fino, and maturo, each one offering a unique Italian taste sensation.
This popular variety is extra ripened and features a pleasantly piquant flavor and solid consistency. Especially with a good glass of wine Prima Donna maturo is very special. The fine, yet visible salt and protein crystals mark its perfectly aged qualities and exclusive character. When finely grated, Prima Donna maturo works outstandingly
well in Mediterranean dishes. Prima Donna maturo is lactose (<0,1g/100g) and gluten free by nature.
