“Ricotta” meaning “Re-Cooked” is a traditional Italian farmhouse cheese. When cheese is made, the solids in the milk are separated from the liquid by coagulation. This liquid is called “whey”. La Vera uses only “pure whey” to produce this soft and creamy Ricotta which is sweet and delicate in flavour.
Our Ricotta consists of a mass of fine, moist, delicate grains and although it is firm in texture it melts in your mouth once it hits the palate. Serve with fruits and jams and is excellent in cooked and baked foods such as pasta fillings, pastry fillings and sauces.
