Giovanni Pazienza’s entrepreneurship resulted in the establishment of Cara Nonna, a small fresh pasta factory, in 1989. The Cara Nonna pasta factory is located in the heart of Tavoliere delle Puglie (famous for the remarkable production of high quality wheats), and the company was converted to produce dry pasta using Apulian wheat shortly after.
Pasta all’Ortolana is an Italian dish that is made by cooking various vegetables before combining them with pasta (Italian: [ortolana] translates as “Greengrocer”).
Cara Nonna’s pasta is designed to replicate the traditional dish. The packet contains a variety of naturally coloured pasta wheels. Carrots, onions, leeks, garlic, zucchini, celery, yellow and red capsicum, cherry tomatoes, and eggplants are used as natural colours.
